If you’re new to brewing kombucha, you’ll need a SCOBY (Symbiotic Culture of Bacteria and Yeast) and some starter tea (already-fermented kombucha) to get started. It’s a bit like the saying: “It takes kombucha to make kombucha.” 

So, where do you find a quality SCOBY and starter tea if you’ve never brewed kombucha before? Let’s explore your options. 

Reputable Online SCOBY Sellers 

One of the easiest ways to get a high-quality SCOBY is by purchasing it from a reputable online store. Look for sellers who have positive customer reviews—more reviews often indicate a trustworthy product. Websites like Amazon or specialty kombucha shops usually offer fresh SCOBYs with strong starter tea. 

What to Avoid: 

  • Dehydrated SCOBYs: It’s tempting to buy these but dehydrated SCOBYs come with some drawbacks. They take longer to reactivate and are often weaker, making your first batch prone to issues like mould. Fresh SCOBYs are easy to find and affordable, so there’s no need to settle for a dehydrated one. 

  • Sellers Suggesting Vinegar: If you see instructions telling you to use vinegar as a starter, avoid those sellers. Vinegar can disrupt the delicate balance of your kombucha. Instead, use store-bought, plain, unflavoured, raw kombucha as your starter tea if necessary. 

Tip: For every ¼ cup of vinegar suggested, substitute it with 1 cup of plain kombucha. 

Size Doesn’t Matter, Strength Does

  • Taste Test: Taste their kombucha first! If you like how it tastes, their SCOBY is likely healthy and strong. 

Grow Your Own SCOBY 

If you’re feeling adventurous, you can grow your own SCOBY from scratch using store-bought, raw kombucha. This process is longer but rewarding if you want to be fully hands-on.
