Tips on Flavour Measurement 

You don’t need to measure ingredients precisely when flavouring kombucha. Instead, rely on your taste and adjust accordingly. As a general rule of thumb, use about 1/4 to 1/3 cup of puree or juice per 16 oz. bottle of kombucha. If the fruit is particularly sour, add a little cane sugar to balance the flavour, keeping in mind that some of the sugar will be consumed by the yeast during second fermentation, which helps produce carbonation. 

Juicing vs. Pureeing

Fresh fruit purees or juices offer a more intense flavour to your kombucha and help with carbonation. If you have a juicer, use it for fruits like pineapple, ginger, apples, pears and citrus. However, for berries and softer fruits like mangoes or peaches, a blender works better to create a smooth puree.
